This delicious recipe makes the most of some very simple yet wonderfully tasty flavours. Pork chops are baked and topped with a sauce made with Italian sausages, passata, Italian seasoning and mushrooms - perfect with a side of pasta and buttered Italian veggies.
- 4 thick cut pork chops
- 200g Italian sausage, removed from the casings
- 1 onion
- 100g chestnut mushrooms
- 1 garlic clove
- 6 tbsp. red wine
- 400g passata
- 1 tsp. Italian herbs
- Salt and pepper
- Oil to fry
Preheat the oven to 190C. Heat oil in a frying pan and season the pork chops on either side. Fry until golden on either side and transfer to a baking tin.
Dice the onion and mince the garlic clove. Add to the pan and fry until translucent and sweet. Crumble the sausage meat into the pan and fry off until browned. Fry the sliced mushrooms in the same pan. Add the wine and passata and herbs and stir well, then bring to a simmer.
Pour the sauce over the chops, cover and bake for 45 minutes or until tender and cooked through.
