Jan Hagels recipe

Preparation Time: 20 minutes | Cooking Time: 30 minutes

These Dutch biscuits are lovely and buttery and are traditionally served at Christmas, but they're yummy at any time of the year. Melt in your mouth and with a light cinnamon flavour, these walnut biscuits are a real treat.


  • 225g butter
  • 200g caster sugar
  • 250g plain flour
  • 1 egg yolk
  • 1 egg white + 1 tsp. water, beaten together
  • 1/2 tsp. cinnamon
  • 75g walnuts, chopped


  1. Preheat the oven to 150C and line two baking trays with parchment paper.

  2. Cream the butter and sugar together until pale and fluffy. Beat in the egg yolk, then sift in the flour and cinnamon. Stir to combine. Press into one baking tin and one half of the other, as though you were making shortbread. Brush with the egg, then sprinkle evenly with walnuts.

  3. Bake for 30 minutes, then cut into squares and cool in the trays.

You could add allspice for a Christmassy flavour, or use brown sugar in place of caster sugar for a richer flavour. Recipe serves 8.
