Jerk Chicken Curry recipe

Preparation Time: 20 minutes | Cooking Time: 40 minutes

Chicken, beans and tomatoes are simmered with a little jerk seasoning in this easy peasy yet super effective recipe. Serve with sticky rice.


  • 8 chicken drumsticks
  • 4 tsp. jerk seasoning
  • 2 red onions
  • 4 tsp. oil
  • Small handful coriander, stalks finely chopped, leaves chopped
  • 2 x 400g tins chopped tomatoes
  • 1 x 400g tin cannellini beans, drained
  • Salt and black pepper


  1. Toss the chicken in 1 tsp. oil, 1 tsp. seasoning and a good pinch of salt and pepper. Brown in a large frying pan then set to one side.

  2. Thinly slice the onions. Heat the rest of the oil in the frying pan, then add the onions and coriander stalks. Cook until golden and softened.

  3. Add the rest of the jerk seasoning and fry until fragrant. Add the chicken, tomatoes and a good pinch of salt and pepper. Cover and cook for 20 minutes, then stir in the cannellini beans. Cook for 10 minutes, then stir in the parsley.

If you like things spicy, add some finely sliced chilli to the dish. Recipe serves 4.
