These beautifully flavoured burgers are perfect for serving with garlic mayonnaise (225g mayonnaise with 3 minced garlic cloves), a seeded burger bun and some red onion rings. They're great to serve at a BBQ as an alternative to the usual beef burgers and the addition of fennel gives them a wonderfully unusual flavour.
- 900g minced lamb
- 1 bulb of fennel
- 4 tbsp. breadcrumbs
- 2 shallots
- Pinch salt and pepper
- 1 tsp. dried oregano
Finely chop the shallots and the fennel bulb.
Mix together the lamb mince, fennel, shallots, breadcrumbs, salt and pepper and oregano.
Shape burgers from the mixture – make them at least 2cm thick.
Cook the burgers on a hot BBQ for 3-5 minutes on each side or in a frying pan for around the same amount of time. Check that they are not pink in the middle before serving.
