Flavoured cooked rice is mixed with flour, milk and eggs then shaped and deep-fried to create wonderfully crispy rice fritters in this fab recipe.
- 500g cooked Brazilian rice
- 120ml milk
- 2 eggs
- 1 tsp. salt
- 3 tbsp. each plain flour and grated parmesan cheese
- 1 tbsp. chopped parsley
- 2 tsp. baking powder
- Oil to fry
Whisk milk and eggs together, then beat in the salt, flour, cheese, parsley and baking powder. Stir in the rice until just combined.
Heat the oil until a cube of bread dropped into it crisps up and turns golden brown. Drop the batter by the spoonful into the oil and cook for 2-4 minutes or until golden brown. Drain on kitchen paper before serving.
