Leftover Rice Fritters recipe

Preparation Time: 20 minutes | Cooking Time: 10 minutes

Flavoured cooked rice is mixed with flour, milk and eggs then shaped and deep-fried to create wonderfully crispy rice fritters in this fab recipe.

Ingredients

  • 500g cooked Brazilian rice
  • 120ml milk
  • 2 eggs
  • 1 tsp. salt
  • 3 tbsp. each plain flour and grated parmesan cheese
  • 1 tbsp. chopped parsley
  • 2 tsp. baking powder
  • Oil to fry

Directions

  1. Whisk milk and eggs together, then beat in the salt, flour, cheese, parsley and baking powder. Stir in the rice until just combined.

  2. Heat the oil until a cube of bread dropped into it crisps up and turns golden brown. Drop the batter by the spoonful into the oil and cook for 2-4 minutes or until golden brown. Drain on kitchen paper before serving.

For extra flavour, pop in some olives, sun-dried tomatoes or a chopped green chilli. Recipe serves 6.
