Leftover Turkey Soup recipe

This simple soup is perfect for getting the flavour out of your used turkey carcass and is ideal for using up leftover stuffing, too. If you don't have a turkey carcass or leftovers, use chicken.

Ingredients

  • 1 turkey carcass
  • 300g stuffing
  • 2 celery sticks
  • 2 carrots
  • 1 onion
  • 2 litres chicken stock
  • Salt and pepper
  • 1 bay leaf
  • 1 tsp. dried mixed herbs

Directions

  1. Peel and chip the celery, carrots and onion. Place into a large casserole pot with the turkey carcass, bay leaf, stuffing, mixed herbs, salt and pepper and chicken stock.

  2. Bring to the boil then reduce to a simmer and cook for one hour. Remove the turkey carcass from the pot, and when cool enough to handle, remove any meat from the carcass and return the meat to the pot.

  3. If you want to, puree the soup so that it is smooth, or leave it chunky. Remember to remove the bay leaf before serving.

Serve this with some croutons or some warm crusty bread. This recipe serves around eight people.
