Lemon Blueberry Bars recipe

Preparation Time: 20 minutes | Cooking Time: 40 minutes

A crumbly lemon-flavoured base is topped with berries, then topped again with a cinnamon and brown sugar mix, then cooked, chilled and sliced into bars. A wonderful treat for breakfast or for afternoon tea.


  • 250g plain flour
  • 110g chilled butter
  • 2 tbsp. caster sugar
  • Zest of 1 large unwaxed lemon
  • 1 egg
  • Pinch salt
  • 1 tsp. vanilla extract
  • 300g blueberries
  • Juice of 1/2 lemon
  • 4 tbsp. caster sugar
  • 100g plain flour
  • 100g dark brown sugar
  • 5 tbsp. butter


  1. Whisk together flour, sugar and salt. Stir in lemon zest. Rub the butter in until the mix resembles breadcrumbs, then beat the egg and add, along with the vanilla. Stir until a dough forms and then press into a 20x30cm baking tin. Bake at 180C for 12-15 minutes or until golden.

  2. Combine blueberries, sugar and lemon zest and sprinkle evenly over the base. Cream butter and sugar until pale and fluffy, stir in the flour until crumbly and then sprinkle evenly over the blueberries. Bake for 20-25 minutes or until lightly browned. Cool and slice into bars.

You could also use orange zest and juice in place of the lemon zest and juice. Recipe serves 12.
