Brussels sprouts are given a high-speed cooking makeover in this recipe. Sprouts are shredded and then quickly cooked with lemon juice, zest, garlic and walnuts. This tastes particularly delicious alongside grilled chicken or other grilled meats.
- 500g Brussels sprouts
- 2 garlic cloves
- Zest and juice of one unwaxed lemon
- 2 tbsp. oil
- 75g walnuts
- Salt and pepper
Trim the sprouts and thinly shred them. Thinly slice the garlic cloves.
Heat a wok over a high heat. Add the oil. Add the garlic and swirl for a few seconds then tip in the sprouts. Stir fry for 4-8 minutes or until the sprouts are tender but still crisp. Stir constantly.
Add the lemon zest, juice and walnuts with plenty of salt and pepper and stir really well. Fry for another 30-40 seconds.
