Lemon and Garlic Runner Beans recipe

Runner beans are fried with garlic, lemon zest and lemon juice in this fantastically fresh recipe. Bursting with zingy flavours, this is a perfect dish for summer.


  • 225g runner beans, trimmed and sliced
  • 2 tbsp. olive oil
  • 1 tbsp. butter
  • 2 tbsp. lemon juice
  • 1 tsp. lemon zest
  • Good pinch each garlic salt and black pepper
  • 1 garlic clove, crushed


1. Heat butter and olive oil together in a large frying pan. Add garlic, runner beans, lemon juice and lemon zest and cook over a low heat for around 10 minutes or until tender and still crunchy. Season with garlic salt and pepper to serve.

For a delicious dish, serve the beans with some feta cheese sprinkled over the top. Recipe serves 2.
