Runner beans are fried with garlic, lemon zest and lemon juice in this fantastically fresh recipe. Bursting with zingy flavours, this is a perfect dish for summer.
- 225g runner beans, trimmed and sliced
- 2 tbsp. olive oil
- 1 tbsp. butter
- 2 tbsp. lemon juice
- 1 tsp. lemon zest
- Good pinch each garlic salt and black pepper
- 1 garlic clove, crushed
1. Heat butter and olive oil together in a large frying pan. Add garlic, runner beans, lemon juice and lemon zest and cook over a low heat for around 10 minutes or until tender and still crunchy. Season with garlic salt and pepper to serve.
