Lemon and Raspberry Brandy Baskets recipe

Preparation Time: 10 minutes

These ridiculously easy puddings are quick to make, yet tasty enough to impress a dinner party crowd. Serve with a good dessert wine or a shot of ice cold limoncello.

Ingredients

  • 4 brandy snap baskets
  • 6 heaped tbsp. mascarpone cheese
  • 2 tbsp. icing sugar
  • 2 heaped tbsp. lemon curd
  • 150g fresh raspberries tossed with 2 tbsp. icing sugar
  • 1 tbsp. toasted flaked almonds

Directions

  1. Beat mascarpone, icing sugar and lemon curd together, then dollop into the brandy snap baskets.

  2. Dot with raspberries, then scatter flaked almonds over the top. Serve.

Don't make this ahead of time - the baskets will go soft. Recipe makes 4.
