These ridiculously easy puddings are quick to make, yet tasty enough to impress a dinner party crowd. Serve with a good dessert wine or a shot of ice cold limoncello.
- 4 brandy snap baskets
- 6 heaped tbsp. mascarpone cheese
- 2 tbsp. icing sugar
- 2 heaped tbsp. lemon curd
- 150g fresh raspberries tossed with 2 tbsp. icing sugar
- 1 tbsp. toasted flaked almonds
Beat mascarpone, icing sugar and lemon curd together, then dollop into the brandy snap baskets.
Dot with raspberries, then scatter flaked almonds over the top. Serve.
