Lemon and Thyme Lamb Chops recipe

These tasty lamb chops are full of the flavours of the Mediterranean. If you’re serving this with roasted vegetables or a salad, make more of the marinade and either use it to cook with or as a salad dressing. You could serve it with either and it would be delicious either way. Add some boiled new potatoes to make the meal more satisfying.


  • 100ml extra-virgin olive oil
  • 60ml lemon juice
  • Small handful fresh thyme leaves
  • 1 tsp. salt
  • 1 tsp. pepper
  • 12 lamb chops


  1. Mix together the oil, lemon juice, thyme leaves and salt and pepper.

  2. Put the lamb chops into the marinade and then leave them for at least an hour.

  3. Cook the lamb chops either on a hot BBQ or in a frying pan for ten minutes, turning once.

For extra kick, why not add a chopped red chilli to the marinade? This recipe serves 12 people.
