Easiest Lentil and Coconut Curry recipe

Preparation Time: 5 minutes | Cooking Time: 30 minutes

This easy peasy lentil and coconut curry is made with just a few storecupboard ingredients and takes just half an hour to prepare. It's filling, nutritious and very, very delicious - just serve over rice or with a naan bread.


  • 100g dried lentils
  • 250ml water
  • 175ml coconut cream
  • 1 tbsp. curry paste of your choice
  • Salt and pepper


  1. Rinse the lentils well and put into a saucepan with the water. Bring to the boil, cover and simmer for 15 minutes over a low heat.

  2. Add the curry paste, coconut cream, salt and pepper. Stir to combine and simmer for another 10-15 minutes or until the sauce is thick and the lentils tender.

If you like, freshen up the curry by adding some chopped coriander right before serving. Recipe serves 2.
