Lime and Coconut Cupcakes recipe

These cupcakes get their coconut flavour from virgin coconut oil - a very versatile ingredient. It keeps the cupcakes nice and moist, and it also gives them a delicious flavour. The lime zest keeps everything fresh and zingy - these sure are tasty cupcakes!


  • 200g plain flour
  • 200g caster sugar
  • 1 1/2 tsp. baking powder
  • Pinch of salt
  • 2 eggs
  • 120ml milk
  • 120ml virgin coconut oil
  • 1 tsp. vanilla extract
  • Zest and juice of 1 lime
  • 200g icing sugar
  • 120g cream cheese
  • 4 tbsp. virgin coconut oil
  • Zest and juice of 1/2 lime
  • 75g dessicated coconut


  1. Preheat the oven to 180C and grease 12 cupcake liners. Place onto a baking tray.

  2. Beat together the coconut oil and caster sugar until pale and fluffy. Beat in the lime juice and zest and vanilla. Beat in the eggs one at a time. You may find it easier to do this using an electric mixer.

  3. Sift together the flour, baking powder and salt. Add 1/3 of the flour mixture into the wet mixture, then 1/3 of the milk, then keep alternating until you've added all of the flour mixture and the milk. Stir until you have a smooth batter.

  4. Divide the batter between the prepared cupcake liners. Bake them for 20-25 minutes until lightly golden. Leave to cool on a wire rack.

  5. To make the icing, beat the cream cheese and coconut oil together. Beat in the zest and lime juice, then gradually beat in the icing sugar. Use to ice the cupcakes.

If you like, you could add some coconut milk to the icing to make it extra creamy. Recipe makes 12 cupcakes.
