Scallops are fried with coriander, garlic, lime and chilli in this simple starter. Serve them up with some crusty bread and butter, or simply with a lightly dressed green salad.
- 16 scallops, prepared
- 4 garlic cloves
- 2 tsp. freshly chopped red chilli
- Juice of 1 lime
- Small handful freshly chopped coriander
- 2 tbsp. olive oil
- Salt and pepper
Mince the garlic cloves. Heat the olive oil in a frying pan and fry the scallops for 1 minute on one side, then flip them over.
Sprinkle the scallops with the mince garlic and chilli and cook for 1 minute.
Squeeze the lime juice over the scallops, fry for a little longer, then season well with salt and pepper.
Sprinkle the coriander over the scallops to serve.
