This fab lime posset uses just a few ingredients for a creamy, refreshing and tangy pud - finished off beautifully with the zingy raspberry coulis.
- 200ml double cream
- 4 tbsp. caster sugar
- Zest 1 lime, 3 tbsp. lime juice
- 100g raspberries
- 2 tbsp. icing sugar
- Dash of lime juice
Mash raspberries, icing sugar and a dash of lime together. Push through a sieve and bottle the coulis.
Put the cream and caster sugar into a saucepan. Heat until boiling, then boil hard for 2 1/2 minutes. Take the pan off the heat, then stir in the lime juice and lime zest.
Divide between 2 glasses and chill until set, then top with the raspberry coulis to serve.
