This simple yet delicious recipe for baked lobster pots makes for a yummy dinner party starter. Cooked lobster is seasoned, drenched in melted butter, topped with a savoury breadcrumb topping and then baked until crisp. Yum!
- 600g cooked lobster meat, shredded
- 50g dried breadcrumbs
- 50g parmesan cheese
- 125g butter, melted
- 2 spring onions
- Juice of 1/2 lemon
- Salt and pepper
Thinly slice the spring onions. Mix the breadcrumbs, parmesan cheese, 50g melted butter, spring onions and lemon juice together in a bowl. Season with salt and pepper
Divide the lobster meat between 6 ramekins. Drizzle the remaining butter over the lobster and then sprinkle with the breadcrumbs. Place onto a baking tray and into a 180C oven. Cook for around 20-25 minutes or until the breadcrumb topping is brown and the lobster is piping hot.
