This yummy dinner party starter or party nibble is super quick and super easy. Mushrooms are stuffed with a mixture of breadcrumbs, crab meat, lobster meat, garlic and butter, then sprinkled with mozzarella and parmesan and baked until hot.
- 8 flat cap field mushrooms
- 175g melted butter
- 450g lobster tail, cleaned
- 175g crab meat, ready prepared or tinned, drained
- 6 garlic cloves
- 100g mozzarella cheese, grated
- 2 tbsp. dried breadcrumbs
- 2 tbsp. grated parmesan cheese
- Salt and pepper
Remove the stems from the mushrooms and dice. Dice the lobster tail and mince the garlic cloves. Shred the crab meat. In a bowl, combine the lobster, crab, garlic, breadcrumbs, salt, pepper, half the mozzarella and mushroom stems.
Brush a baking tray with a little butter. Add the rest of the butter to the stuffing mix. Stir to combine. Pile the stuffing into the centre of the mushrooms, letting it overlap a little, then sprinkle with remaining mozzarella and parmesan cheese. Bake in a 200C oven for 10-12 minutes or until golden and cooked.
