- 220g macaroni pasta
- 110g grated cheddar cheese
- 110g grated gruyere cheese
- 110g grated smoked cheddar cheese (or blue cheese, or mozzarella, or emmental)
- 60g butter
- 2 tbsp. plain flour
- 475ml milk
- 1 small onion
- Salt and pepper
Finely mince the onion. Preheat oven to 180C.
Prepare a pan of boiling salted water. Add the macaroni and cook according to packet instructions, but for about 3-4 minutes less. Drain and set to one side.
Meanwhile, melt the butter in a heavy saucepan. Stir in the flour and stir until combined. Stir over a medium heat for 3-4 minutes until it turns pale. Gradually stir in the milk, stirring all the while, until you have a smooth sauce. Cook until the sauce comes to the boil, then cook for another minute or two. Add salt and pepper to taste. Stir in half of each of the cheeses and stir until melted, then stir in the onion.
Stir the macaroni into the sauce. Spread into an oven dish and lightly stir in the rest of the cheese. Cover and bake for 45 minutes.
