Maine Lobster Sandwich Filling recipe

Preparation Time: 10 minutes

This simple sandwich mix is a deliciously different way to enjoy lobster. Cooked lobster is tossed with mayonnaise, lime juice, spices, herbs, salt and pepper. Serve with soft white rolls.


  • 700g lobster meat, cooked, shredded or cubed
  • 4 tbsp. mayonnaise
  • 2 tbsp. lime juice
  • Hot sauce to taste (a few dashes)
  • 4 spring onions
  • 1 large celery stalk
  • 1 tbsp. freshly chopped parsley
  • Salt and pepper


  1. Thinly slice the spring onions on the diagonal. Thinly slice the celery stalk into thin strips, then finely dice.

  2. In a bowl, stir together the mayo, lime juice and parsley. Add the lobster meat and fold in, then fold in the spring onions and celery. Season with salt and pepper to taste and hot sauce to taste. Just a few dashes will do.

  3. Cover and chill until ready to use.

A pinch of paprika is delicious in this recipe, as is a small pinch of dried basil or dried chilli flakes. Recipe serves 4-6.
