Mango and Banana Bread recipe

This unusual take on traditional banana bread makes for a gooey, squidgy bread studded with bites of fresh, sweet mango. Serve as it is or toast it and serve with butter for a tasty mid-afternoon treat.

Ingredients

  • 200g plain flour
  • 110g brown sugar
  • 110g natural yoghurt
  • 3 very ripe bananas
  • 1 mango, peeled and sliced, destoned
  • 4 tbsp. canola oil
  • 1 egg
  • 1 tsp. vanilla extract
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1 tsp. bicarbonate of soda
  • 75g chopped walnuts

Directions

  1. Mash the bananas in a bowl. Add the mango and mash in.

  2. Stir in the yoghurt, oil, sugar and salt. Beat in the egg and vanilla.

  3. Sift in the flour, baking powder and bicarb. Stir well, then fold in the walnuts. Spoon into a greased loaf tin and bake at 180C for one hour, until a skewer inserted into the centre of the loaf comes out clean.

For the best results, use ripe mangoes as they will be sweeter and squishier. Recipe makes 10 slices.
