These tropical cupcakes are the perfect addition to any children's (or adult's) birthday party menu. A basic cupcake recipe is flavoured with palm sugar and dried mango, yielding soft cupcakes with lovely bites of sweet mango throughout.
- 175g unsalted butter
- 125g caster sugar
- 50g palm sugar
- 175g self-raising flour
- 3 eggs
- 2 tbsp. tropical juice
- 50g dried mango, chopped
Preheat the oven to 180C and grease 12 cupcake liners. Place onto a baking tray.
Beat the sugar, palm sugar and butter together until pale and fluffy. Beat in the eggs one at a time, then sift in the flour and stir to combine. Stir in the mango juice and fold in the dried mango. Divide between the prepare cupcake liners.
Bake the cupcakes for 20 minutes or until lightly golden on top and springy to the touch. Leave to cool before icing.
