The soft creaminess of mozzarella works well with all sorts of ingredients, and this recipe combines salty ham, sweet mango and creamy mozzarella along with a zingy dressing to create the perfect salad.
- 3 x 125g mozzarella balls, drained
- 12 slices smoked prosciutto ham
- 2 ripe mangoes
- 100g wild rocket
- 100g baby spinach leaves
- 10 basil leaves
- 5 tbsp. extra-virgin olive oil
- 2 tbsp. lemon juice
- 2 tbsp. very finely chopped basil leaves
- 1 tsp. sweet chilli sauce
Whisk together the olive oil, lemon juice, chopped basil leaves and sweet chilli sauce. Season to taste.
Peel, stone and thinly slice the mangoes. Slice the mozzarella.
Layer the mango, ham and mozzarella on 4 serving plates. Combine the rocket, spinach and basil and toss with the dressing. Arrange the salad on top of the other ingredients. Drizzle with any extra dressing.
