Mango & Red Pepper Salsa recipe

Preparation Time: 15 minutes

If you don't like your salsa too spicy, this recipe is for you - it's wonderfully sweet and yet still savoury, perfect for pairing with grilled chicken or fish.


  • 1 mango
  • 1/2 red pepper
  • 2 spring onions
  • Small handful freshly chopped coriander
  • Juice of 1 lime
  • 1 tsp. extra-virgin olive oil
  • 1/4 tsp. each salt and pepper
  • 1 tsp. runny honey


  1. Peel, stone and finely cube the mango. Finely dice the red pepper, discarding the seeds and pith. Thinly slice the spring onions.

  2. Combine the mango, red pepper, spring onions, coriander, lime juice and olive oil in a bowl. Season to taste with the salt, pepper and honey.

This recipe will keep for a day or two in the fridge - it tastes best if you make it the night before you need it, as the flavours can develop overnight. Recipe serves 4.
