Sardines are a wonderful fresh fish and this recipe really makes the most of them. Sardines are marinated with chilli, garlic and parsley, and although they are eaten raw, the lemon juice "cooks" them, meaning they are perfectly safe to eat.
- 500g fresh sardines, boned and scaled
- Juice of 3 lemons
- 3 garlic cloves
- 1 small red chilli
- 1 handful freshly chopped parsley
- 1 tbsp. extra-virgin olive oil
- Salt and pepper
Lay the sardines skin side down on a plate. Pour the lemon juice all over the flesh. Finely mince the garlic clove. Slice the chilli in half and remove the seeds with the back of your knife, then finely mince the flesh.
Sprinkle the fish with the garlic, chilli and parsley. Season, then drizzle with oil. Place in the fridge for at least one hour or up to 24 hours. Let the fish come back to room temperature before serving.
