Marmalade Muffins recipe

These marmalade-flavoured muffins are packed with orange zest and a dash of juice, then filled with a chunky marmalade. If you like, add lemon zest to the muffin mix and fill with lemon curd instead.


  • 175g plain flour
  • 175g light brown sugar
  • 25g porridge oats
  • 1 tsp. baking powder
  • 1/2 tsp. bicarbonate of soda
  • Zest and juice of 1 orange
  • 150g yoghurt
  • 1 tbsp. veg oil
  • 1 large egg
  • 9 heaped tsp. marmalade


  1. Heat oven to 180C. Grease or line a 12-hole muffin tin with 9 liners.

  2. Combine the flour, sugar, oats, baking powder and bicarb in a bowl. In another, whisk together the orange juice and zest, yoghurt, oil and egg. Stir the wet mix into the dry mix, then divide half the mix between the liners, top each with 1 tsp. of marmalade, then top with the rest of the mix.

  3. Bake for 15-20 minutes until risen slightly and cool a little before serving.

You could also turn these into jammy muffins by adding a few blended raspberries to the batter and by spooning jam into the muffins when baking. Recipe makes 9.
