- 1kg marrows
- 1 apple
- 1 onion
- 1 green pepper
- 1 garlic clove
- 250ml white wine vinegar
- 250g brown sugar
- 1 tbsp. English mustard
- Good pinch each salt and chilli flakes
Peel and chop the marrows. Peel, core and dice the apple. Finely chop the onion and the garlic clove. Slice the pepper in half and remove the seeds and pith then finely dice.
Place the marrows, apple, onion, green pepper, garlic clove, vinegar, sugar, mustard, salt and chilli flakes.
Bring everything to the boil, then reduce to a simmer and cook for up to an hour or more until thick and sticky. Cool and then spoon into sterilised jars.
