A simple and unique way to prepare marrow, in this recipe, marrow is tossed with eggs, flour, cheese, fresh herbs and olive oil before being baked in the oven. Cook and serve cool, cut into squares.
- 450g grated marrow, patted dry
- 4 eggs
- 1 onion
- 125ml oil
- 100g plain flour
- 1 tbsp. baking powder
- 1 tsp. caster sugar
- 1 tsp. salt
- 50g grated parmesan and cheddar
- 1 tbsp. each freshly chopped parsley and basil
- 1/2 tbsp. freshly chopped oregano
Finely dice the onion. In a bowl, whisk together the flour, baking powder, sugar, salt, parmesan, cheddar, parsley, basil and oregano. In a jug, whisk together the oil and eggs. Fold in the onion.
Gradually whisk the wet mix into the dry mix until fully combined. Fold in the marrow. Pour into a baking dish, then bake at 180C for 30-40 minutes until golden and set. Leave to cool before serving.
