Marrow Fritters recipe

Preparation Time: 10 minutes | Cooking Time: 10 minutes

Earthy, sweet, crispy and delicious, these yummy fritters are a fantastic way to use up an abundance of marrow in your allotment. Serve with a little tomato sauce or some sour cream.


  • 225g grated marrow, squeezed to get rid of water
  • 100g each plain flour, freshly grated parmesan and grated mozzarella
  • 1 small onion
  • 2 eggs
  • Salt and pepper
  • 1/2 tsp. mixed dried herbs
  • Oil


  1. Mince the onion and beat the eggs. In a bowl, combine the flour, parmesan, mozzarella, onion, salt, pepper and herbs. Gradually beat in the eggs, then fold in the marrow.

  2. Heat oil in a frying pan. Drop the marrow mix by the tablespoonful into the hot oil. Cook for a couple of minutes until golden and crisp, then flip over and cook until golden and crisp on the other side.

If you like, add some sweetcorn, or a little dried chilli for a kick of flavour. Recipe serves 4.
