Earthy, sweet, crispy and delicious, these yummy fritters are a fantastic way to use up an abundance of marrow in your allotment. Serve with a little tomato sauce or some sour cream.
- 225g grated marrow, squeezed to get rid of water
- 100g each plain flour, freshly grated parmesan and grated mozzarella
- 1 small onion
- 2 eggs
- Salt and pepper
- 1/2 tsp. mixed dried herbs
Mince the onion and beat the eggs. In a bowl, combine the flour, parmesan, mozzarella, onion, salt, pepper and herbs. Gradually beat in the eggs, then fold in the marrow.
Heat oil in a frying pan. Drop the marrow mix by the tablespoonful into the hot oil. Cook for a couple of minutes until golden and crisp, then flip over and cook until golden and crisp on the other side.
