This easy recipe uses just four ingredients to create a sticky, sweet mousse, using marshmallows - giving it a rich texture and a delicious flavour.
- 250g strawberries, hulled, chopped
- 25g caster sugar
- 100ml water
- 140g mini marshmallows
- 200ml double cream
Put the strawberries, sugar and water into a saucepan. Cook over a low heat for 3-4 minutes or until the strawberries are mushy, then stir in the marshmallows until dissolved. Cool.
Whip the cream until soft peaks form, then fold the strawberry mix into the cream. Spoon into two serving dishes, then smooth the top and chill until set.
