These pancake bits are a great alternative to sandwiches if you're feeling a bit peckish. Mmake the pancakes yourself, or just buy them ready-made from a shop - then fill them with this delicious selection of Mediterannean ingredients.
- 8 pancakes
- 140g red peppers roasted in a jar, drained, sliced
- 140g aubergines roasted in a jar, drained
- Good handful fresh basil leaves, shredded
- 150g cream cheese
- 2 tbsp. green pesto
Mix the pesto with the cream cheese.
Lay each pancake on the worktop. Put 1/8 of the cream cheese mix into the centre of each pancake and spread slightly. Top with red pepper, aubergine and basil leaves, then fold the two side in over the filling, pressing down to enclose, then the top and bottom down too. You should have a rough pancake square.
Slice each square diagonally through the middle to create two triangles.
