Mediterranean Couscous recipe

Preparation Time: 10 minutes

In this lovely recipe, couscous is tossed with pesto, pine nuts and feta cheese for a well-flavoured salad that is perfect for lunch. If you like, add some grilled chicken pieces or some tofu pieces for a little extra protein.


  • 100g couscous
  • 200ml stock
  • 2 spring onions
  • 1 red pepper
  • 2 cherry tomatoes
  • 1/2 cucumber
  • 2 tbsp. pesto
  • 2 tbsp. pine nuts, toasted
  • 50g feta cheese


  1. Thinly slice the spring onions on the diagonal. Halve the red pepper and remove the seeds and pith. Dice. Slice the cherry tomatoes. Scoop the seeds from the cucumber and finely chop.

  2. Cover couscous with stock and cover with cling. Leave to sit for 10 minutes until fluffy. When cooked, toss with the pesto, cucumber, tomatoes, red pepper and spring onions. To serve, scatter with crumbled feta and pine nuts.

If you like, add a little tangy lemon dressing or some lemon zest for a little fresh flavour. Recipe serves 2.
