Bananas are mashed into a sweet cinnamon cake batter in this easy recipe that can be cooked in the microwave - perfect for impromptu parties or if you have unexpected guests.
- 100g butter
- 100g light muscovado sugar
- 100g self-raising flour
- 2 ripe bananas, 1 1/2 mashed, 1/2 sliced
- 2 eggs
- 2 tsp. ground cinnamon
- 2 tbsp. milk
Put butter into a 1-litre microwave safe pudding dish and microwave for 30 seconds or until melted. Mash in the banana, then mix in the sugar, flour, cinnamon, eggs and milk until well combined. Flatten the top.
Arrange the sliced bananas over the top of the pudding. Microwave on high for eight minutes or until risen and golden on top.
