We think it's one of the best ice cream flavour combinations in the world - and luckily, it's easier to make than you might think. Don't forget the green food colouring as it makes it look extra authentic.
- 500ml milk
- 500ml double cream
- 200g caster sugar
- 1/2 tsp. salt
- 1 tsp. vanilla extract
- 1 tsp. peppermint extract
- 3 or 4 drops green food colouring
- 200g chopped dark chocolate
Whisk together milk, cream, sugar, salt, vanilla, peppermint and green food colouring. Taste and add more peppermint, if you like.
Pour the mix into an ice cream maker or freeze for 3-4 hours in a freezer-proof container. Churn according to manufacturer's instructions or stir halfway through freezing. Stir the chocolate into the ice cream half way through churning or freezing. Take out of the freezer for 15 minutes before serving.
