Minted Mangetout recipe

This recipe for minted mangetout is really simple - mangetout is stir-fried with garlic, then tossed with finely chopped mint for a wonderfully fresh side dish.


  • 350g mangetout
  • 1 tbsp. oil
  • 3 spring onions, trimmed, thinly sliced
  • 1 garlic clove, thinly sliced
  • Good pinch each salt and pepper
  • 1 tbsp. freshly chopped mint


  1. Heat oil in a large frying pan and add the spring onions and garlic. Cook until tender, and then add the mangetout.

  2. Cook for 2-3 minutes or until tender, then season with salt and pepper and sprinkle with mint.

If you like, serve the mangetout cold with pasta or rice to make a salad. Recipe serves 2-4.
