This recipe for minted mangetout is really simple - mangetout is stir-fried with garlic, then tossed with finely chopped mint for a wonderfully fresh side dish.
- 350g mangetout
- 1 tbsp. oil
- 3 spring onions, trimmed, thinly sliced
- 1 garlic clove, thinly sliced
- Good pinch each salt and pepper
- 1 tbsp. freshly chopped mint
Heat oil in a large frying pan and add the spring onions and garlic. Cook until tender, and then add the mangetout.
Cook for 2-3 minutes or until tender, then season with salt and pepper and sprinkle with mint.
