This side dish couldn't be simpler. Broccoli is tossed with basil pesto, fresh mint, fresh basil, parmesan and pine nuts. Perfect with roasted chicken.
- 300g broccoli
- Small bunch fresh mint
- Small bunch fresh basil
- 145g jar green pesto
- 2 tbsp. toasted pine nuts
- 2 tbsp. grated parmesan cheese
Slice the broccoli into florets. Steam for 5-8 minutes or until tender.
Finely chop the mint and basil. In a small bowl, stir together the herbs and pesto. Once the broccoli is cooked, add to the pesto and stir to coat.
To serve, sprinkle the broccoli with pine nuts and parmesan cheese.
