Minty Runner Bean Salad recipe

Preparation Time: 10 minutes | Cooking Time: 10 minutes

This easy salad uses just five ingredients but it's incredibly tasty. Runner beans, balsamic, fresh mint and garlic combine. Serve it warm or at room temperature.

Ingredients

  • 600g runner beans, trimmed and sliced
  • 3 tbsp. oil
  • 3 garlic cloves, thinly sliced
  • 1 tbsp. balsamic vinegar
  • 3 tbsp. finely chopped fresh mint

Directions

  1. Cook the runner beans in boiling salted water for around 5-6 minutes or until tender. Drain, then pat dry,

  2. Meanwhile, heat one tbsp olive oil in a frying pan and add the garlic. Cook until golden and lightly tender, then pour all over the beans. Whisk together the rest of the oil, vinegar and mint then pour all over the beans. Toss to coat.

If you're not a big mint fan, use some freshly chopped parsley instead. Recipe serves 4.
