Mocha Bacon Cupcakes recipe

Preparation Time: 20 minutes | Cooking Time: 30 minutes

Chocolate, coffee and crispy salted bacon combine in these soft and squidgy cupcakes. It sounds like an odd combination, but the saltiness of the bacon seasons the chocolate wonderfully, bringing out the flavours. Great for parties!


  • 200g caster sugar
  • 150g dark brown soft sugar
  • 250g plain flour
  • 75g unsweetened cocoa powder
  • 12 rashers streaky bacon
  • 2 tsp. bicarbonate of soda
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 250ml coffee, strong
  • 250ml buttermilk
  • 2 eggs
  • 125ml vegetable oil


  1. Fry the bacon over a medium heat until crisp and golden. Drain on kitchen paper and crumble.

  2. In a bowl, whisk together the sugars, flour, cocoa powder, bicarb, baking powder and salt. In another, whisk together the eggs, coffee, buttermilk and oil until as smooth as possible. Make a well in the centre of the dry ingredients, then pour in the wet and gradually combine the two until you have a fairly smooth batter. Fold in the bacon.

  3. Line two muffin tins with 24 paper cases. Spoon the batter into the prepared cases and bake for 20-25 minutes in a 190C oven or until they are lightly springy to the touch.

If you like, ice with a fudgy chocolate icing and sprinkle with more bacon. Recipe makes 24 cakes.
