These delicious cupcakes are flavoured with cocoa powder and instant coffee, but they are sweetened with brown sugar - making them extra squidgy and soft. Add the coffee to your own taste - just taste the batter before you put the cakes in the oven.
- 150g soft brown sugar
- 150g butter
- 100g plain flour
- 50g cocoa powder
- 3 eggs
- 1 1/2 tsp. baking powder
- Pinch of salt
- 1 tbsp. milk
- 1 tbsp. instant coffee powder (use the best you can find)
Heat oven to 190C and grease 12 cupcake liners. Place onto a baking tray.
Beat together the sugar and butter until you have a pale, fluffy mixture. Beat in the eggs one at a time until fully combined. Sift in the flour, cocoa powder, baking powder and salt and stir to combine.
Stir in the milk and the coffee. Taste and add more coffee if desired. Divide the batter between the prepared cupcake liners. Bake for 15-20 minutes until the cupcakes spring back to the touch. Leave to cool on a wire rack before icing.
