These apple muffins are the absolute best type of muffins – lovely and golden on the outside and soft and squidgy in the middle. They're sweet, but not too sweet, and they are either a fantastic dessert or a wonderful lunchbox filler for the kids. Sprinkle them with icing sugar to make them look just a little bit more special.
- 200g plain flour
- 100g caster sugar
- 90ml milk
- 80ml vegetable oil
- 50g brown sugar
- 2 large apples
- 1 egg
- 1 tsp. vanilla extract
- 2 ½ tsp. baking powder
- Pinch of salt
Preheat the oven to 200C and prepare a muffin tin with paper muffin cases.
Peel, core and chop the apples into quite small chunks.
Place the flour, caster sugar, brown sugar, salt and baking powder into a bowl.
Add the milk, vegetable oil, egg and vanilla extract.
Stir well until just combined. It will be lumpy.
Fold in the chopped apples and spoon the mixture into the muffin tray.
Put into the oven and cook for 20 minutes or until golden brown on top.
