Mushrooms are fried off with red onion and garlic, then combined with creme fraiche, Dijon mustard and some fresh herbs. Serve spread on toasted French or ciabatta bread with a spoonful of red onion chutney and some fresh salad leaves.
- 200g mixed mushrooms
- 1 shallot
- 1 red onion
- 2 garlic cloves
- 2 tbsp. creme fraiche
- 2 tsp. Dijon mustard
- Small handful freshly chopped herbs of choice (use soft herbs)
- 50g butter
Finely dice the mushrooms, shallot and red onion and mince the garlic cloves. Alternatively, throw everything into a food processor and whiz until finely chopped.
Heat butter in a large frying pan. Add the shallot, red onion and mushroom and fry gently for 10 minutes or until everything is cooked and tender. Add the garlic and fry for a minute or two. Cook until all of the liquid evaporates off.
Add the creme fraiche, mustard and herbs. Stir to combine. Heat for a minute or two, then season to taste.
