Mushroom and Red Onion Pate recipe

Preparation Time: 10 minutes | Cooking Time: 20 minutes

Mushrooms are fried off with red onion and garlic, then combined with creme fraiche, Dijon mustard and some fresh herbs. Serve spread on toasted French or ciabatta bread with a spoonful of red onion chutney and some fresh salad leaves.


  • 200g mixed mushrooms
  • 1 shallot
  • 1 red onion
  • 2 garlic cloves
  • 2 tbsp. creme fraiche
  • 2 tsp. Dijon mustard
  • Small handful freshly chopped herbs of choice (use soft herbs)
  • 50g butter


  1. Finely dice the mushrooms, shallot and red onion and mince the garlic cloves. Alternatively, throw everything into a food processor and whiz until finely chopped.

  2. Heat butter in a large frying pan. Add the shallot, red onion and mushroom and fry gently for 10 minutes or until everything is cooked and tender. Add the garlic and fry for a minute or two. Cook until all of the liquid evaporates off.

  3. Add the creme fraiche, mustard and herbs. Stir to combine. Heat for a minute or two, then season to taste.

If you prefer, pop this pate into ramekins and chill, then serve at room temperature with melba toast. Recipe serves 4.
