These delicious no-cook truffles are smooth and soft in texture with a delicious crunch from the biscuits and the coconut. These will make a great Christmas gift, and they're also super easy to make.
- 1 x 400g tin condensed milk
- 250g digestive biscuits
- 250g desiccated coconut
- 2 tbsp. unsweetened cocoa powder
Crush the biscuits either using a rolling pin and resealable bag, or in a food processor, until they resemble small crumbs. Pour into a bowl. Add half the coconut and cocoa powder and mix well with a spoon. Add the condensed milk and mix well until the other ingredients are thoroughly coated.
With wet hands, take teaspoonfuls of the mix and roll into balls. Roll in the extra desiccated coconut and set to one side on a baking tray. Once made, chill the truffles in the fridge before serving.
