Nutty Sprout and Blue Cheese Salad recipe

Preparation Time: 20 minutes

Fresh sprouts are tossed with red cabbage, celery stalks and carrots in a light and fresh salad dressing made with cranberry sauce, before being sprinkled with mixed nuts and blue cheese for a delicious and fresh twist on Christmas leftovers.


  • 1/2 red cabbage
  • 200g Brussels sprouts
  • 2 celery stalks
  • 2 carrots
  • 1 apple, cored
  • 175g mixed chopped nuts
  • 150g blue cheese
  • 6 tbsp. olive oil
  • 5 tbsp. cranberry sauce
  • 5 tbsp. orange juice
  • Salt and pepper


  1. Finely shred the red cabbage and the sprouts. Finely chop the celery and carrots. Thinly slice the apple.

  2. Whisk together the oil, cranberry sauce, orange juice and salt and pepper to taste. Toss the cabbage, sprouts, celery, carrots and the apple in the dressing.

  3. To serve, sprinkle with the chopped nuts and the crumbled blue cheese.

If you like, you can use cooked sprouts and carrots for a variation in texture - just be sure to pick veggies that aren't coated in gravy. Recipe serves 4.
