Apple porridge oats, apple sauce and mixed spice make these oaty apple spice muffins extra special. Plus, they're really easy to make - and they're great for kids.
- 240g plain flour
- 80g (approx 2 40g sachets) apple flavoured porridge oats
- 165g brown sugar
- 25g butter
- 1 tsp. bicarbonate of soda
- 1/2 tsp. mixed spice
- 280g unsweetened apple sauce
- 2 tbsp. veg oil
- 2 eggs
- 1 large dessert apple, peeled, cored and grated
Preheat oven to 190C and grease or line a 12-hole muffin tin.
Combine 40g of the flour, 1 sachet of the porridge, around 65g of the brown sugar and the butter in a bowl. Rub the mixture together with your fingertips until it resembles fine breadcrumbs.
Combine the rest of the flour, porridge, bicarb and mixed spice. Combine the sugar, apple sauce, oil and eggs and beat until the sugar dissolves. Pour the wet mix into the dry mix and stir until just combined, then fold in the apple. Divide between the muffin liners. Sprinkle with the topping you made earlier. Bake for 20 minutes or until a skewer inserted into the centre of a muffin comes out clean.
