Oaty Banana Blueberry Muffins recipe

If you don't want to make banana bread with your overripe bananas, why not make these delicious banana blueberry muffins instead? Perfect for lunchboxes.


  • 300g self-raising flour
  • 285ml buttermilk
  • 150g blueberries
  • 2 eggs
  • 5 tbsp. oil
  • 2 ripe bananas, mashed
  • 50g porridge oats
  • 1 tsp. bicarbonate of soda
  • 100g light brown sugar


  1. Heat oven to 160C and line a muffin tin with 12 liners. Toss blueberries in 2 tbsp. of the flour. Sift the flour and bicarb into a bowl, then whisk in the sugar and oats. Whisk the buttermilk, eggs, oil and banana together.

  2. Add wet mix to dry mix and stir until just combined. Fold in the blueberries and drop into the muffin liners. Bake for 18-20 minutes or until risen and golden.

Add some dried blueberries for extra flavour, or, you could add some dried banana chips. Recipe makes 12 muffins.
