Oaty Banana Muffins recipe

Oats give these glorious banana muffins a chewy, dense texture, making them extra filling and just perfect for breakfast.


  • 200g plain flour
  • 80g porridge oats
  • 100g caster sugar
  • 2 tsp. baking powder
  • 1 tsp. bicarbonate of soda
  • 1/2 tsp. salt
  • 1 egg
  • 175ml milk
  • 75ml veg oil
  • 1 tsp. vanilla
  • 250g mashed bananas


  1. Combine the dry ingredients: flour, oats, sugar, baking powder, bicarb and salt in a large bowl. Whisk together the egg, milk, veg oil and vanilla, then mash in the banana. Stir the wet mix into the dry mix until lightly combined, then pour the batter into a 12-hole lined muffin tin.

  2. Bake muffins at 200C for 18-20 minutes, until just golden and risen.

If you like, add linseed to the muffins to give them a crunchier texture, or dried fruit or nuts. Recipe makes 12 muffins.
