A delicious and traditional way to enjoy cherries, this cherry pie has a little bit of a twist - the pastry is made with oats, which makes it extra chewy and gives it a lovely flavour. Serve this pie with some double cream and some chocolate sauce.
- 300g cherries, stems and stones removed
- 100g caster sugar
- 100g plain flour
- 60g porridge oats
- 60g butter
- 35g brown sugar
- 1 tsp. vanilla
- 45ml water
Preheat oven to 220C. Grease a 23cm pie dish.
In a bowl, stir together the cherries and sugar and set to one side.
Cream together the butter and sugar until pale and fluffy. Stir in the vanilla. Sift in the flour and stir, then fold in the oats. Add water to hin.
Press the pastry into the bottom of the pie dish, ensuring that some of the pastry comes up around the sides to form a crust.
Pour the cherry mix over the pastry and bake in the preheated oven for 12-15 minutes, or until the pastry is golden and the cherries bubbling.
