Oaty Dried Cherry Muffins recipe

Preparation Time: 20 minutes | Cooking Time: 30 minutes

Oats give these muffins a wonderfully chewy texture - while the orange zest gives them a gentle tang and a lovely sweetness. Serve for breakfast or with a big cup of tea.

  • 100g plain flour
  • 85g wholemeal flour
  • 35g toasted wheatgerm
  • 85g rolled oats
  • 7 tbsp. caster sugar
  • 1 tsp. baking powder
  • 1/2 tsp. bicarbonate of soda
  • 350g buttermilk
  • 3 tbsp. olive oil
  • 1 egg
  • Zest of 2 oranges
  • 200g plump dried cherries

  1. Preheat oven to 190C and grease or line a 12-hole muffin tin.

  2. Combine plain flour, wholemeal flour, wheatgerm, oats, sugar, baking powder and bicarb in a bowl. Whisk together the buttermilk, oil and egg, then add the wet mix to dry mix and stir to moisten. Fold in the orange zest and dried cherries, then divide between the liners. Bake for 30 minutes or until a skewer inserted into the centre of a muffin comes out clean.

You could use lemon zest and dried blueberries or even lime zest and dried raspberries in place of the orange zest and cherries. Recipe makes 12.
