This easy yet delicious recipe for raspberry slices uses regular porridge oats, raspberry jam and just a handful of additional ingredients, like brown sugar and butter. Perfect for a snack or for a lunchbox treat.
- 250g raspberry jam
- 125g butter
- 100g porridge oats
- 125g plain flour
- 6 tbsp. brown sugar
- 1/4 tsp. bicarbonate of soda
- Good pinch salt
Preheat the oven to 180C. Grease and line a 20cm square cake tin.
Combine oats, flour, sugar, bicarb and salt in a bowl. Rub the butter in using your fingertips until it resembles fine breadcrumbs. Press 3/4 firmly into the tin, spread with jam nearly up to the edges, then evenly spread the rest over the top of the jam.
Bake for 35-40 minutes or until golden and firm. Cut into squares.
