Easy Peasy Oaty Raspberry Slices recipe

Preparation Time: 20 minutes | Cooking Time: 40 minutes

This easy yet delicious recipe for raspberry slices uses regular porridge oats, raspberry jam and just a handful of additional ingredients, like brown sugar and butter. Perfect for a snack or for a lunchbox treat.


  • 250g raspberry jam
  • 125g butter
  • 100g porridge oats
  • 125g plain flour
  • 6 tbsp. brown sugar
  • 1/4 tsp. bicarbonate of soda
  • Good pinch salt


  1. Preheat the oven to 180C. Grease and line a 20cm square cake tin.

  2. Combine oats, flour, sugar, bicarb and salt in a bowl. Rub the butter in using your fingertips until it resembles fine breadcrumbs. Press 3/4 firmly into the tin, spread with jam nearly up to the edges, then evenly spread the rest over the top of the jam.

  3. Bake for 35-40 minutes or until golden and firm. Cut into squares.

If you like, serve these squares warm from the oven for a real treat. Recipe makes 12.
