This easy baked custard recipe is a very traditional French dessert, made with just four ingredients. It's a really handy dessert to have up your sleeve when all you have in are eggs and milk - plus, you can add different flavours to it if you like.
- 2 eggs
- 425 milk
- 85g caster sugar
- 1 tsp. vanilla extract
Butter four ramekins and heat the oven to 140C. Put a kettle of water onto boil.
Put the milk, sugar and vanilla into a pan, then bring to the boil and heat very briefly until the sugar has dissolved.
Beat the eggs until frothy in a large bowl, then gradually whisk in the milk. Put the bowl over a pan of barely simmering water and cook, whisking, until the custard thickens and can coat the back of a spoon.
Strain through a sieve and pour into 4 ramekins. Place into a roasting tin and put into the oven, then pour boiling water halfway up the sides of the ramekins. Put into the oven and bake for 20-30 minutes or until the custards are just set with a wobble in the middle. Serve them warm, if you like, or cool.
