Apple Omelette recipe

This unusual sounding recipe is actually really simple and really delicious. Think of it as a cross between a large, fluffy pancake and an apple pie. Serve it with cold vanilla ice cream and serve it straight from the oven before it has a chance to deflate. To make it look a little more special, dust it with some icing sugar before serving.

Ingredients

  • 2 egg whites
  • 2 egg yolks
  • 3 tbsp. caster sugar
  • 3 tbsp. plain flour
  • 3 tbsp. milk
  • 1 large apple
  • 1 tbsp. lemon juice
  • 1 tsp. butter
  • ½ tsp. ground cinnamon
  • ¼ tsp. baking powder
  • Pinch salt
  • 1 tbsp. caster sugar

Directions

  1. Core, peel and thinly slice the apple.

  2. Preheat the oven to 180C.

  3. Whip the egg whites together until foamy and then sprinkle with 3 tbsp. caster sugar. Continue whisking until stiff peaks form.

  4. In a bowl, mix together the flour, baking powder and salt. Add the egg yolks, milk and lemon juice and stir to form a smooth batter.

  5. Fold the egg whites into this batter until you have a light batter.

  6. Melt the butter in a large frying pan that is suitable for use in an oven. Pour in the batter and layer the sliced apples over it. Sprinkle with the remaining caster sugar and the cinnamon.

  7. Put the pan into the oven and cook for ten minutes, or until the eggs are risen and the apples are glazed.

Let the omelette cool for a few minutes before sliding it from the pan. Cut it into wedges to serve. The amount of servings really depends on how many wedges you cut and how big your pan is, but you can expect to serve around four people from this recipe.
